RECIPE: Lemon Cheesecake Bliss Balls (V, DF, GF)

Bliss balls are the perfect snack or healthy sweet, and these surprisingly simple vegan, gluten-free and dairy-free cheesecake inspired treats are one of my favourites! Subtle hints of lemon, using minimal coconut flour and the addition of apple cider vinegar give them a delicious but sweet tang.

INGREDIENTS:
250g cashews (soaked for 30 mins)
1 cup + 1 tbsp almond meal
1/4 cup coconut flour
Juice of 2 ripe lemons
2 tsp ACV
2 tbsp stevia or preferred sweetener
2 tsp vanilla essence
METHOD:
Soak the cashews for at least 30 minutes by placing them in a bowl and covering them with boiling water.
Combine all ingredients in a high powered blender/food processor until the mixture reaches a dough-like consistency.
Roll into balls and freeze for at least 4 hours. Store in the freezer but remove them before consuming to allow them to slightly defrost.

Recipe notes:
- I tried using alternative flours such as oat but found that the mixture became quite gluey and gluggy, in comparison to the smooth texture produced by almond meal.
- Add more lemon juice or ACV to up the ante on the flavour.
